Not really if you are talking about those connected to can openers that have a little protection over them. If you are talking about a big wheel electric sharpener, I would recommend eye protection. Normal finger protection is called for.

Be sure to wear eye protection when using a grinding stone.

As long as you are careful and wear proper eye protection, no. You will not get a good cutting edge though. Grinding stones/wheels are made to remove metal quickly, not sharpen to a cutting edge. What you will get is a jagged edge that will be really rough.

You have the rest on which to put the back of the knife on and point the edge upward. Now slowly tilt the top edge toward the rotating stone. As the metal barely contacts, pull the knife sideways to do the whole length. Repeat this process a number of times. That way the metal does not heat up and you get a sharp edge.

if it is a slow, water cooled grinder maybe, but an electric grinder will only get you close to a sharp blade, finish it off on a handheld arkansas stone…

If it is maked “Stainless Steel” you may ruin the grinding stone before you shape your knife. But here goes-Wear Eye protection and gloves, the steel will get hot. Do a little at a time. Good luck!
