you should be able to purchase a new one from hitachi, look at their web site

if you cant put any kind of regular wrench behind it then hold the locking button in and slam the edge of the wheel on a hard sharp surface ( edge of work bench or curb ) so that the disc spins counter clockwise. do this until it comes loose. From then on only tighten just a little past snug (by hand with gloves ) and you will always be able to take it off by hand. Always wear safety glasses and gloves. TRUST ME I’m a welder by trade and use a grinder every day and this is how we do it. The disc you get off will be damaged or broken. DO NOT USE

Purchase an adjustable universal wrench that can be used on any grinder. They are cheap and stocked by most hardware stores.
