			<content:encoded><![CDATA[<p>India is a nation of twenty-four states speaking hundreds of tongues. All the same, there is a reasonably sharp division between Northern India and Southern India, leastways with reference to cooking.</p>
<p>There is plenty of mixing to be sure. However, one instance of this difference is found in what will be served with the main dish. In Southern India, that is more likely to be some type of rice dish, much less usually seen in Northern Indian menus.</p>
<p>As you should think in such a diverse and ancient land, there are thousands of rice-based recipes. Nearly every family will have their own distinctive favourite. Here is an example that any diner will enjoy&#8230;</p>
<p>Bisi Bele Baath </p>
<p>Bisi Bele Baath is a mixture of rice and lentils that forms the principal dish of many an Indian table. It is rich in traditional Indian spices and is simply delightful with Tandoori Chicken or by itself.</p>
<p>Ingredients:</p>
<p>190 g long-grained brown rice<br />240 ml water<br />240 ml tamarind juice<br />1/2 cup lentil beans<br />75 g carrots<br />225 g peas</p>
<p>Seasoning:</p>
<p>For the truly adventurous, you can prepare your own garam masala for seasoning or simply buy the mixture pre-made.</p>
<p>1/2 tsp turmeric powder<br />1 tsp coriander seeds<br />1 tsp cumin seeds<br />4 cardamon pods<br />8 peppercorns<br />3 dried red chilies<br />1 tsp fennel seeds<br />1 tsp crushed garlic and 1 tsp finely chopped ginger blended together to make a paste<br />6 cloves<br />1 tsp mustard seeds</p>
<p>Method:</p>
<p>To prepare the masala, dry roast all the ingredients (apart from the pastes) in a frying pan until the aroma fills the air, but don&#8217;t let them burn.</p>
<p>Then use a coffee grinder or spice grinder to make everything into a very fine powder. Add the spice powder to the garlic and ginger paste and mix well in a large bowl. Add a tablespoon of vegetable oil to thicken and mix until well blended. For a delicious added sweetness, throw in an inch of cinnamon stick and stir again.</p>
<p>Once you have done that, put the tamarind juice and water in a saucepan and bring to the boil. Add the rice and vegetables, then sprinkle on the masala. Reduce heat to low and cook for 8-20 minutes, according to the directions on the rice package.</p>
<p>Once the rice is cooked, fluff it up with a fork.</p>
<p>Serving:</p>
<p>Rice is best served hot, so it is normally made after the other dishes are prepared. It can be kept covered for a few minutes if needed.  Avoid letting it sit too long, though, because it will &#8216;wilt&#8217; unless the pan is uncovered, in which case it dries out too quickly.</p>
<p>Lay the rice onto a platter then top with a Tandoori Chicken dish for an outstanding combination of North and South</p>

Coffee is the second most imported commodity in todays market, right behind petroleum. This beverage has become so widely used that many coffee-derivative drinks have been produced and consumed for years. Below are a few prevalent coffee drink recipes.</p>
<p>The first drink would, of course, be coffee. Grown all around the planet but particularly in Ethiopia, the Middle East, Columbia and Brazil, coffee seeds are extracted, dried, and then roasted. The method in preparation is complex, but the coffee drink recipe for coffee is simple: Coffee beans, consisting of caffeine and a variety of oils indigenous to the particular environment in which the beans are harvested.</p>
<p>One coffee drink, called Ca Phe Sua, beloved in Vietnam comes in two variations Ca Phe Sua Da (coffee, milk, and ice) and Ca Phe Sua Nong (coffee and milk hot). The coffee drink recipe for the first consists of the simple process of blending dark French Roast with a quarter to half percent of condensed milk and then pouring, through a small drip filter, over ice. The coffee drink recipe for the second is similar, but ice is withheld, leaving only hot Ca Phe Sua.</p>
<p>The well-known and widely consumed Espresso, invented and produced in Italy and widely used all over Europe, has a wide array of coffee drink recipes. Only a couple of them are described here.</p>
<p>A formal Italian Espresso is created by forcing moderately hot water through high pressure (nine to ten atmospheres, or bars) into extremely fine-ground coffee to create a drink thicker in consistency than regular coffee and composed of a variety of vegetable oils, proteins, sugars, and reddish-brown foam called Crema.</p>
<p>Espresso has very little water. The coffee drink recipe for Caffe Americano (American Coffee), an American version of Espresso, has a higher degree of water and is made similar to the drip-brew fashion.</p>
<p>The coffee drink recipe for Latte (Italian for milk) is a simple one: Caf a Latte, meaning Coffee and Milk, is composed of one-third Espresso and two-thirds steamed milk, poured together simultaneously into either side of the drinking cup. Caf Lattes typically have foam floating on top.</p>
<p>The Frappaccino is a widely known drink sold by the Starbucks coffee chain. This coffee drink recipe is as follows: one-part soluble coffee is blended with water, which in turn is mixed with an one-part proprietary liquid comprised of milk, sugar substances, and caramel flavoring and then eventually with ice. A Frappaccino has a milkshake consistency, an intense coffee flavor, and is chilled before drinking.</p>
<p>All of these and many other coffee drink recipes are available on the Web or in various recipe books. For those who love coffee, these coffee drink recipes will leave mouths watering!</p>

<p>Now, I’m talking a real super food. Some people get all giddy and call anything with a trace of nutrition a super food. Not a chance.</p>
<p>Even many of the foods known for their nutritional power, blueberries, for instance, can’t really be called super foods. Good, yes. Super, well no.</p>
<p>Super foods are few, and until recently we’ve behaved as if the one I want to talk about has no value. Not only as food, but for anything. </p>
<p>The Aztecs treasured it for the energy it provides, but then it went into a 500 year slump. We not only didn’t recognize its value, we treated it as a joke.</p>
<p>What is this super food that gets no respect? Chia. </p>
<p>Part of the Christmas season is cheesy commercials touting the Chia Pet, a clay lamb, dog, whatever. You wet the pet and spread the accompanying chia seeds all over it. The chia grows like grass. Then it dies, and you throw the whole contraption away. </p>
<p>Pretty casual for something that can help you lose weight, help diabetics control their blood sugar, correct gastrointestinal problems, lower your cholesterol, and give you energy and endurance like there’s no tomorrow. Takes away muscle pain, too And helps keep your muscles toned. Plus it improves your skin and makes your joints work better. Finally, it reduces inflammation, part and parcel of most diseases.</p>
<p>Let’s take a closer look.</p>
<p>Chia has lots of DHA, the main ingredient in the fish oil everybody talks about, and since it’s from a plant, it works for vegetarians. And it doesn’t whack out the endocrine system like flax, which is a weaker source in any case.</p>
<p>Chia also contains all the essential amino acids. Amino acids form the basis for all protein, and we need protein for health, especially people with endocrine issues such as thyroid. “Essential” means the body can’t make it; you have to eat it. </p>
<p>Then, too, chia’s chock-a-block full of trace minerals–plus some badly needed macro minerals, like magnesium.</p>
<p>Okay, so it’s powerful stuff. How do I use it?</p>
<p>Well, you can throw a handful of seeds into salads, cereals and such. Mostly, though, people grind the seeds in a coffee or spice grinder and add away to just about anything they cook. Thicken soups, gravies and salad dressings. Add it to the stuffing. Use it in baking. If you’re into protein shakes, throw some in there. Chia has virtually no taste, so you don’t change the taste of your food. </p>
<p>Some people make a chia gel by adding 1/3 cup of chia seeds to two cups of water. (Always add the seeds to the water, not vice versa) Give it a good shake and let it sit for about an hour. The chia soaks up the water, and you get a gel. Store it in the refrigerator for up to two weeks. </p>
<p>Then the gel’s all ready for easy adding to whatever you’re cooking, making it more nutritious, lower in calories per serving and more sustaining. You won’t be hungry for a while after eating chia food. Just grab the jar from the refrigerator, spoon a bunch into whatever you’re cooking, and you’re good to go. </p>
<p>Chia works as a meal substitute, too. Chomp on, say, a tablespoon (Less than fifty calories) of the itty-bitty seeds, and drink a large glass of water. The seeds absorb the water, and you absorb the nutrition while feeling comfortably full until your next meal. The Aztecs took long trips with nothing but chia.</p>
<p>And the claim about helping diabetics control their blood sugar? Chia’s full of fiber, which slows down absorption, which helps balance blood sugar levels.</p>
<p>Everybody toots less, too.</p>
<p>What’s not to like? I mean, besides those goofy clay pets.</p>
